Guarumo Coffee Farm is located in Santa Clara, Renacimiento, Chiriquí Province, at 1.750 meters. Varietals produced at the farm currently are Geisha, AF-2, Chicho Gallo, Mocca, AR- 36 and Beloya, a combination not found anywhere else in Panama so far. Most of these seeds were brought in from Ethiopia trying to give them a “new home” on this farm in Panama and so far the results are outstanding. The Chicho Gallo variety, which comes from the scenic Amaro Gallo region of Ethiopia, is given the best conditions and care a Hartmann Estate in Panama. This variety comes from a local landrace in the Amaro Gallo region of Ethiopia. The variety is used to high altitudes and cool climates with nutrient-rich soils. The “chicho” comes from the name of Ratibor Hartmann’s father, who passed away. The Hartmann family, who are passionate about cultivating unique and exquisite varieties, first planted Chicho Gallo in the early 2010s. Coffee and mucilage is moved to raised drying beds. Parchment is visually inspected to remove damaged or over- and under-ripes. Raised beds allow for better airflow throughout drying that help prevent over-ripening, fermenting or spoiling. Parchment is raked frequently to ensure even drying.
