Midsummer Night Moon

One of our most famous exclusive lot from Ethiopia, Yirgacheffe. Coffee cherries of 23 degree brix were selected for this lot. Undergoes two stages of anaerobic fermentation, one with whole cherry while the second stage are depulped and added yeast. The whole fermentation process are at environment temperature of 23 degree Celsius to prevent over fermentation to highlight the natural floral notes of ethiopia in the final cups.
