Due to the climate changes, the coffee cherries dry faster than usual resulting a low fermentation rate that causes classic Ethiopian natural flavor getting weaker. In order to replicate the classic berries notes of Ethiopia coffee, we customized this lot with a private mills located at Chelbesa village, by covering the coffee cherries with cloths to slow down the entire drying process, lead to a 28 days of sun-drying process, creating a coffee full of aromatic berries notes.
