La Lesa (Honey)

This selected lot is one of our special lot work with Ephtah Coffee. The coffee cherries is collected within Lalesa VIllage which is located in Southest part of Gedeb. We process this coffee in Ephtah Coffee Private Drying Mill which the worker are mainly kids and women, the project is to give more economic support to these women and also their family by giving them extra salary for producing and harvesting better quality of coffee cherries. We process this lot by doing a pre-dried of coffee cherries, leading to a raisin-like coffee cherries, then the coffee cherries is de-pulped and sundried on african bed with mucilage on it and covered by plastic to prevent too much water loss that is leading to a lower fermentation rate.
