Pino de Oro is owned by Edgardo Tinoco. In 2009, he decided to participate in the Cup of Excellence competition, convinced that his coffee was very good, but he was eliminated soon; the next year he improved the process of his coffee and return to the competition and won the 3rd place, he was very happy, with the money that he earned he improved the farm and the wet mill to make a process most clean.
The cherries are de-pulped every afternoon, then, the parchment is put into fermentation tanks with some water where it´s wet fermented for 12 hours; Then, the water is extracted and has dry fermentation for 6 hours more. Next, the parchment is rinsed into the tank with a lot of water four times. Then, it´s put inside the parabolic solar dryer for around 20 days.
