La Margaritha, formerly known as La Julia. Owned by Oscar Cardona. They have been work closely with us for several year. Many of our exclusive special colombia lot are produced by Oscar. The Coffee cherries undergoes Anaerobic fermentation, then is depulped and undergoes second stages of anaerobic fermentation with innoculated yeast from Taiwan famous Jade Lychee. This Coffee also undergoes Thermo Shock process which coffee is washed with water heated to 75°C and moved into the drying phase, where it is dried at 38°C over 46 hours in controlled mechanical equipment, ensuring consistency and preserving the complex flavors developed during fermentation.
