Srima is an organic coffee farm located in Chiang Rai. It is owned by Joe, a friend that we met during 2023. Joe and his family has been plant their coffee organically for three generation. This Lot of coffee we design for a friend’s competition. The idea was using a cherries that is high in sweetness, undergoes high temperature of anaerobic fermentation for 2 days, then the skin if remove and undergoes low temperature of anaerobic fermentation to create different layer of sweetness. Hence we choose yellow bourbon from Srima that is known to have higher sweetness compared to other variety of coffee. The coffee is pretty hard to roast though, its very dense and high sweetness, but we still manage to perfect it by roasting shorter development with longer Maillard reaction
