Inspired by 2023 WBC 1st runner up coffee, Finca Milan Intentional Bacterial Fermentation, the coffee is full of melon flavor and candy-like aroma. Using our technology and research from NPUST on cultivating yeast and bacteria, we sucessfully make a castillo lot that are similar to Finca Milan’s Coffee. Using Thermo Shock processing method also improve the aftertaste quality of the coffee. Thermo Shock, process consists in rapid heating of the liquid temperature in the containers to 40 degrees Celsius. With added cultivated yeast, the grain (coffee seeds with husk) will logically begin to absorb even more flavors and aromas. The grain is then immediately rinse in cold water, the sudden cooling of the coffee beans closes the pores,  That way, the grains really leave a maximum of flavor palettes.
